D(-) - and L(+) - Lactic Acids Contents of Commercial Yogurts

Abstract
|
|
|
The ranges of D(-)- and L(+)-lactic acids contents in commercial liquid yogurt were 6.l ¡535.8mg/100 ml and 70.0¡664.6 mg/100 ml, respectively. The ratio of L(+)-lactic acid to D(-)-lactic acid was 0.2¡109.0. The ranges of D(-)- and L(+)-lactic acids contents in commercial semi-solid yogurt were 10.1¡418.3 mg/100 g and 515.8¡792.1 mg/100 g, respectively. The ratio of L(+)-lactic acid to D(-)-lactic acid was 1.2-78.4.
